Fresh kiwifruit is loaded with energy-boosting vitamins and minerals without a heavy caloric cost. Amazingly, two kiwifruit (one serving) is less than 100 calories. A two-piece serving of kiwifruit has twice the vitamin C of an orange, as much potassium as a banana and as much fiber as a serving of bran flakes.

Ever notice some months kiwifruit is noticeably smaller, wrinkled and more tart in the produce store and other months it is unblemished and bursting with flavor? While kiwifruit is available year-round, like other fruits and veggies it does have a specific season when it simply tastes best and you can count on plump, juicy fruit every time.

RUM KIWIFRUIT DAISY

INGREDIENTS:
1 ZESPRI® GREEN Kiwifruit
12 fresh mint leaves
2 lime wedges
1/2 oz (24.2 ml) honey syrup (1 part honey and 1 part water) 
2 oz (56.8 ml) white rum
1 sprig of fresh mint for garnish
1 lime wedge for garnish

METHOD:

  1. Slice kiwifruit in half and use a spoon to scoop out small pieces into a cocktail shaker.
  2. Add mint leaves, lime and honey syrup and muddle to combine.
  3. Add rum, and shake all ingredients with ice.
  4. Strain into 11 oz (312.5 ml) glass (either bucket or stem glass) filled half full with crushed ice.
  5. Stir briefly; then fill glass with crushed ice.

Garnish with mint sprig and lime.

Prep time: 5 minutes
Makes: 1 cocktail





CRISPY BAKED CHICKEN TENDERS 
WITH KIWI-HONEY MUSTARD AND KIWI-CHIPOTLE KETCHUP

Crispy Baked Chicken Tenders

INGREDIENTS:

1 tablespoon Flour
1/2 teaspoon Salt
1/4 teaspoon Black pepper
1 Egg, beaten
1 cup Corn flake cereal, crushed
1 pound Chicken tenderloins, uncooked, cut into 2-inch long strips

METHOD:

  1. Preheat oven to 375°F. Foil-line large baking sheet.
  2. Mix flour, salt and pepper in shallow dish. Place egg in shallow dish. Place corn flakes in shallow dish.  Roll chicken tenders in flour mixture. Dip in egg and roll in cereal flakes to coat completely.  Place on prepared baking sheet.
  3. Bake for 18 to 20 minutes until done, turning once. While chicken is baking prepare Kiwi-Honey Mustard and Kiwi-Chipotle Relish.

Kiwi Honey Mustard

INGREDIENTS:

2 ZESPRI® GREEN or GOLD Kiwifruit, peeled and diced
2 tablespoons Yellow mustard
2 tablespoons Honey

METHOD:

Combine kiwifruit, mustard and honey in small bowl.

Kiwi-Chipotle Ketchup

INGREDIENTS:

2 ZESPRI® GREEN or GOLD Kiwifruit, peeled and diced
1/4 cup Ketchup
1 pinch Chipotle chile powder (optional)

METHOD:

Combine kiwifruit, ketchup and chipotle powder in small bowl.

Nutrition Analysis per Serving (1/4 of recipe): 40 Calories, 1g Protein, 9g Carbohydrate, 1g Fiber, 0g Fat, 0g Sat. Fat, 0g Trans Fat, 0mg Cholesterol, 170mg sodium

ZINGY SALAD

INGREDIENTS:
2 ZESPRI® GREEN Kiwifruit
1 small red-skinned apple
1 tbsp lemon juice
1 tbsp salad oil
1/2 cup dried apricots, coarsely chopped
1/2 cup walnuts or pecans, coarsely chopped

METHOD:

  1. Slice kiwifruit into halves and spoon the fruit out into a medium bowl in bite-sized chunks.
  2. Core and dice the apple and add it to the kiwifruit with the lemon juice and the oil. Toss to coat.
  3. Add in the apricots and nuts, toss one more time, and serve.

Prep time: 15 minutes
Makes: 1-2 servings
